Menu Theme: Louisiana Food/Valentine's Day/Mardi Gras
Soup Course: Duck and Andouille Gumbo
House-Made Andouille sausage (made by the students), duck, traditional
mirepoix, all simmered in a flavorful duck stock, thickened by a dark roux and seasoned to perfection.
Salad Couse: Heartbeat Salad
Mixed green salad with roasted beets, pears, and a house made vinaigrete.
Entree Course: Andouille Crusted Redfish topped with a Citrus Beurre Blanc Sauce, served with Crawfish and Asparagus Risotto.
Dessert Course: Special Valentine's Day Chocolate Dessert, Chef's Choice
