    SUMMARY:
    Responsible for supervising food preparation and presentation.

    ESSENTIAL DUTIES AND RESPONSIBILITIES include the following (other duties may be assigned):
    Assume complete charge of the Restaurant and production areas.
    Administer disciplinary action, train, and supervise staff.
    Adapt the crew to any change in the volume of business.
    Enforce the rules of the Health Department for safe food handling.
    Ensure employee's duties are performed to specifications set.
    Responsible for dress code and appearance standards.
    Maintain a daily production inventory and monitor receiving practices.
    Responsible for checking the methods of preparation, sizes or portioning and the garnishing of food.
    Assist with cooking, carving difficult dishes during rush periods.
    Other job related duties as assigned by the Chef.
    Train all staff in job position.

    MINIMUM QUALIFICATIONS

    EDUCATION and/or EXPERIENCE
    High school diploma/GED. Culinary arts degree preferred. Minimum five years' experience in in a High Volume Food Operation (a casino atmosphere preferred). Possess a working knowledge of Microsoft Word and Excel.

    WORKING CONDITIONS
    To perform this job successfully, the individual must be able to stand, move and work throughout the office area and properties, including walking up to 1 ½ mile, climbing stairs and sitting at a desk/work station for the duration of the shift. Also may be subjected to a smoke filled environment. The noise level in the work environment is usually moderate, but will escalate when located in the casino environment. Must be able to grasp, bend, lift and/or carry or otherwise move goods weighing a minimum of 25 lbs. on an intermittent basis, and sufficient dexterity of hand in order to use office equipment including, but not limited to: a computer keyboard, calculator, general office equipment and multi-line telephone.
